What You Need:
Large Portobello Mushroom Caps (one for each person)
Whole Wheat Buns
Arugula or Lettuce
- Preheat oven to 425
- Drizzle Portobello cap with balsamic vinegar and olive oil
- Place on a cookie sheet in the oven for 10mins, remove from the oven and cover with blue cheese and red onion (or any of your favorite toppings)
- Return to the oven on broil for 3 mins, or until cheese is melted
- Top with some fresh spinach or arugula on a wheat bun - enjoy!
