When I'm absolutely exhausted but need something quick and healthy to eat, I resort to my tuna nicoise-esque salad. Really, I just throw together what I find in my fridge and I rarely have olives or all the ingredients on hand. But it doesn't matter. It's all about getting the job done in a delicious way. Here's how I do it:
1) Toss together 2 cups of mixed field greens with some sliced cucumber and tomato in a big salad bowl. Add about half a tablespoon of your favourite dressing.
2) Top your salad with 1/2 can of flaked light tuna and 1 sliced hardboiled egg.
3) Variations - add sliced radishes, boiled green beans, nicoise olives, boiled potatoes or any of your favourite vegetables to really make it a meal
