One of my favourite things to make in the summer is this salad with fresh heirloom tomatoes from the farmers' market. You can keep it as simple or make it more complex, depending on your mood or the occassion.
I generally like to pick out a variety of different coloured ripe heirloom tomatoes and leave them on the counter instead of the fridge to preserve all that good flavour. Slice about 1/2" thick and arrange on a pretty plate.
Drizzle with good olive oil and balsamic vinegar.
Season with salt and pepper.
Optional - I like to add basil leaves, burrata or fresh mozarella cheese. Serve with a nice big loaf of crusty Italian bread and some sliced proscuitto. Enjoy with a cold, crisp glass of white wine.
